Kupaža i garaža
Prvi deo naslova se odnosi na poseban postupak mešanja dve ili čak više vrsta i tipova vina, što mu daje posebnost i specifičan kvalitet. Dobar i iskusan vinar će pre nego što odluči šta će kupirati te godine, isprobati dosta kombinacija dok ne nadje pravu. Intuicija će ga voditi na tom putu, pošto pravila nema. Znajući kvalitet samog groždja, odlučiće o polaznoj osnovi kupaže, na primer, neka je to Merlot (koji daje eleganciju) u većinskom odnosu i dodavaće Cabernet Franc ili /i Cabernet Souvignon, Marselan ili Petit Verdot u odnosu koji mu se dopadne. Svake godine to može biti potpuno drugačija kombinacija. Za to je potrebno vreme, osećaj, strpljenje i ljubav. Mnogi ljudi daju prednost kupažama pri pijenju vina. Što se tehnike tiče, moram da dodam da svako vino posebno leži i zri i tek kad završi taj proces, pristupa se kupaži. Ja sam ovde navela primer crvene kupaže, ali da ne biste bili u zabludi moram da dodam da i bela vina mogu da se kupažiraju.
Sve ovo me dovodi do sledeće teme, a to su garažna vina. Nedavno sam pročitala tekst o sve većoj rasprostranjenosti ovakvih vina u Hrvatskoj. Poznato mi je da se u Francuskoj, u Bordou već dugo proizvode male serije vina u isto tako malim vinarijama koje liče na garaže. To su obično vinari koji nemaju svoje vinograde, ali zato otkupljuju isključivo vrhunsko, najkvalitetnije groždje i od njega prave vrhunska vina, često zanimljive i smele kupaže, koja koštaju mnogo i teško se nalaze u prodaji.Tu praksu sada možemo sresti u susednoj Hrvatskoj s tom razlikom što Hrvati, garažni vinari, imaju svoje vinograde sa pretežno hrvatskim autohtomim sortama i eventualno dokupe izvesnu količinu groždja, jer im se vino sve više traži.Snabdevaju mali broj ekskluzivnih restorana i vinoteka i do njihovog vina se može doći samo ličnim kontaktom. Vino proizvode tradicionalnim tehnikama i često ne koriste pesticide pa im groždje spada u organsko. Dakle,ekstra kvalitet i ekstremno male količine daju i ekstra cenu- do 200 evra po boci. Medjutim, neki od njih su pokupili velika medjunarodna priznanja i zlatne medalje na najprestižnijim ocenjivanjima u svetu. Svaka čast! Kod nas postoji slično vinarstvo, ali samo po veličini vinarije. Gotovo uvek mala vinarija garažnog tipa u Srbiji automatski znači loše vino. Nedavno sam probala vino jednog malog proizvodjača iz Banoštora, u pitanju je bilo n e k o crveno vino, izbačeno na tržište posle t r i meseca(jako mu se traži, kaže, pa ne stigne da odleži???) i očajna pljunula. A ima ljudi koji to piju i hvale, što na žalost, govori sve o našoj vinskoj neosvešćenosti. Nadam se samo da će tržište izdiktirati zahteve koji će morati da se ispoštuju i isprate i samim tim privući još mnogo onihi koji će postati ljubitelji vina, s razlogom. Ako je neko, nov i neupućen, na samom početku probao neko takvo "vrlo traženo" vino, onda me ni ne čudi da se vratio pivu brže nego što je od njega i krenuo.
Vrlo traženo i "vrlo traženo" su dva različita pojma...lepo je što si naglasila razliku.

Baš mi je drago da ima zainteresovanih za ovu temu koju pokušavam da učinim što bliskijom, a da ne davim. š
Što se tiče zlahtine,odnosno Žlahtine, moram da kažem da nisam imala priliku da probam nijedno iako sam ćula za tu autohtonu hrvatsku sortu. Gaji se samo na ostrvu Krk, gde je stigla 1880 godine, a ime potiče od reči "žlahten " što znači -uzvišen.Spada u kvalitetno suvo belo vino, može da se pije kao mlado i da se pravi penušavac od njega.
